Spinach Stuffed Mushrooms

Ingredients
- Olive Oil cooking spray
- 30 large whole fresh mushrooms, stems removed
- 1/4 cup egg substitute
- Pepper to taste
- 2 tsp minced garlic
- 10 oz package frozen, chopped spinach (thawed and drained)
- 1/4 cup grated parmesan cheese
- 2 oz Gouda cheese, shredded
- 2 oz fat-free cream cheese
- 1/4 cup shredded fat-free mozzarella cheese
- 1/4 cup dry bread crumbs

Directions
Preheat oven to 375 degrees. Spray muffin tins with cooking spray. Lightly spray mushrooms with cooking spray. Place mushrooms in muffin tins with the gill side facing up.
Bake in oven for approximately 10-12 minutes or until tender.
In a medium bowl, mix together egg substitute and garlic. Stir in spinach, parmesan, Gouda, mozzarella, cream cheese, and bread crumbs. Mix until well blended.
Fill each mushroom with spinach mixture and place in muffin tin.
Place back in oven and bake until golden brown, approximately 10-12 minutes.
Makes 15 servings (2 stuffed mushrooms)
