Spinach Appetizers

Spinach Appetizers

Ingredients

  • 10 oz package frozen, chopped spinach
  • 2 cups Brownberry unseasoned bread cubes
  • 6 oz egg substitute
  • 2 oz reduced fat parmesan cheese
  • 1/2 onion, chopped
  • 1 tsp minced garlic
  • 2 tbsp light margarine, melted
  • 1/4 cup reduced-fat shredded cheddar cheese

Directions

  1. Cook spinach according to package directions.  Drain well. Mix together spinach, bread cubes, egg substitute, parmesan cheese, onion, garlic, melted margarine, and cheddar cheese in a large bowl.  Place in refrigerator and chill for approximately 30 minutes. 

  2. Spray baking sheet with olive oil spray.  Drop mixture by rounded spoonfuls onto baking sheet. Freeze for at least 1 hour.

  3. Before baking, partially thaw (approximately 30 minutes).  Preheat oven to 350 degrees.  Re-spray baking sheet with olive oil spray. 

  4. Bake in oven for approximately 20-25 minutes or until lightly browned.
