Spinach Appetizers

Ingredients
- 10 oz package frozen, chopped spinach
- 2 cups Brownberry unseasoned bread cubes
- 6 oz egg substitute
- 2 oz reduced fat parmesan cheese
- 1/2 onion, chopped
- 1 tsp minced garlic
- 2 tbsp light margarine, melted
- 1/4 cup reduced-fat shredded cheddar cheese

Directions
Cook spinach according to package directions. Drain well. Mix together spinach, bread cubes, egg substitute, parmesan cheese, onion, garlic, melted margarine, and cheddar cheese in a large bowl. Place in refrigerator and chill for approximately 30 minutes.
Spray baking sheet with olive oil spray. Drop mixture by rounded spoonfuls onto baking sheet. Freeze for at least 1 hour.
Before baking, partially thaw (approximately 30 minutes). Preheat oven to 350 degrees. Re-spray baking sheet with olive oil spray.
Bake in oven for approximately 20-25 minutes or until lightly browned.
