Pineapple Pork

Pineapple Pork

Ingredients

  • 1 medium green pepper cut into strips
  • 4 boneless pork top loin chops (approx. 1 pound)
  • 1 can pineapple chunks (8 oz., undrained)
  • 1/4 tsp ginger
  • 1/4 tsp cinnamon

Directions

  1. Spray skillet with cooking spray. Heat skillet. Place pork chops on skillet and cook over low heat. Cook each side for approximately 5 minutes. Center should not be pink. Once cooked through, remove pork from skillet and place on a serving dish.

  2. Carefully wipe out skillet and spray with cooking spray. Place pepper strips in skillet.

  3. Pour in pineapple chunks and juice. Stir in ginger and cinnamon. Simmer for about 3-5 minutes.

  4. Spoon mixture on top of pork chops.
