Ingredients
- 1 medium green pepper cut into strips
- 4 boneless pork top loin chops (approx. 1 pound)
- 1 can pineapple chunks (8 oz., undrained)
- 1/4 tsp ginger
- 1/4 tsp cinnamon

Directions
Spray skillet with cooking spray. Heat skillet. Place pork chops on skillet and cook over low heat. Cook each side for approximately 5 minutes. Center should not be pink. Once cooked through, remove pork from skillet and place on a serving dish.
Carefully wipe out skillet and spray with cooking spray. Place pepper strips in skillet.
Pour in pineapple chunks and juice. Stir in ginger and cinnamon. Simmer for about 3-5 minutes.
Spoon mixture on top of pork chops.
