Ingredients
- 1/4 cup pine nuts
- 1 cup quinoa
- 1 cup water
- 1 cup low-sodium vegetable broth
- 1/4 cup fresh lemon juice
- 1/4 red onion, chopped
- 1/4 tsp cayenne
- 1/4 tsp ground cumin
- 1/3 cup dried cranberries

Directions
In a dry, medium skillet, toast pine nuts. Stir regularly to prevent burning.
Rinse quinoa in a strainer. Combine quinoa, water and low sodium vegetable broth in a medium saucepan. After it begins to boil, reduce heat and let quinoa cook until tender and all water has been absorbed (about 10 minutes). Use fork to fluff.
Stir in pine nuts, onion, lemon juice, cayenne, cumin and dried cranberries.
